DIMENSIONS OF ROLE

Normal working hours will be 5 shifts of 9 hours rostered between Monday to Sunday, including one-hour unpaid lunch on each day worked; making a total 40 working hours per week.

 KEY PURPOSE OF ROLE

The Cellar Manager is responsible for planning and overseeing the effective management, organisation and operational integrity of the Main Cellar and all associated storage areas. The role ensures stock accuracy, optimal product rotation, and compliance with food safety, licensing, and health & safety regulations. The Cellar Manager supports service delivery by maintaining product quality, overseeing the hygiene of the Main Cellar and all associated storage areas, ordering stock, planning and coordinating deliveries, and ensuring the efficient supply of food and beverages to all areas.

 KEY TASKS AND ACCOUNTABILITIES

 Operational Management

  • Oversee day-to-day cellar operations, ensuring safe and efficient receipt, storage, rotation, and dispensing of beverages.
  • Maintain accurate stock levels, performing regular counts, reconciliations, and variance investigations.
  • Manage stock rotation using FIFO/FEFO principles to ensure product freshness and minimise wastage.
  • Ensure all products are stored, handled, and served in line with manufacturer specifications and licensing conditions.
  • Manage cellar temperature, gas systems, and technical dispense equipment to maintain optimal product quality.
  • Coordinate with suppliers, distributors, and internal departments to schedule and manage deliveries.
  • Ensure highest levels of safety are maintained across the operation with active training, monitoring and intervention.

 Quality Assurance

  • Conduct regular line cleaning, cellar hygiene checks, and quality audits to ensure compliance.
  • Monitor product condition and report any quality issues to suppliers and relevant operations team.
  • Maintain detailed records of cleaning cycles, maintenance activities, and inspections.

 Resource & Workflow Management

  • Recruit and build an effective and cohesive team that live and breathe a healthy culture in line with the club’s values
  • Plan and allocate work to cellar staff, ensuring adequate coverage for peak operational periods.
  • Train team members on cellar procedures, product handling, and safety requirements.
  • Liaise with bar, restaurant, and events teams to support service schedules and product demand.
  • Support non-match day operations when and where business requires.
  • Work collaboratively with stakeholders to maintain strong operational relationships.

 Cost Control

  • Manage wastage, breakages, and returns, identifying trends and implementing corrective actions.
  • Ensure cost-effective ordering, efficient
  • stock rotation, and accurate record keeping.
  • Work with management to support stock forecasting and stock-take preparation.
  • Work closely with the Accounts and Stock Administration Team.

 VARIATIONS OF JOB RELATING TO MAJOR MATCHES

  • Attendance at all major match-days, including weekends, as required.
  • Occasional night-shift work may be necessary.
  • Provide general support for all aspects of ground operations and management as directed.
  • A high degree of flexibility is required regarding shift patterns during major match days.
  • Any other duties, whether in the Department or elsewhere around the Ground, as required.

  • Responsible for the safety of yourself and others through adherence to MCC (and legal) safety rules and procedures.
  • Report any unsafe practices, equipment or circumstances as appropriate.
  • Comply fully with relevant security policies and procedures.
  • Be familiar with fire procedures and evacuation procedures and be prepared to operate when/if trained as a Fire Warden.

PERSON SPECIFICATIONS – SKILLS, EXPERIENCE AND QUALIFICATIONS

Essential Skills and Experience

  • Proven experience in cellar management, bar operations, or beverage stock control.
  • Strong organisational and record-keeping skills, with attention to detail and accuracy.
  • Demonstrable understanding of stock rotation techniques and beverage quality control.
  • Ability to work flexibly, including evenings, weekends, and event schedules.
  • Strong communication skills and the ability to work collaboratively with multiple departments.
  • Experience supervising or coordinating staff.
  • Broad product knowledge across wines, spirits and beer

 Essential Qualifications & IT Skills

  • Knowledge of cellar operations, beverage dispense systems, and cellar hygiene standards.
  • Basic food hygiene certification (or willingness to obtain).
  • Familiarity with stock management systems, EPOS, or inventory software.
  • Competence in standard IT applications (Microsoft Excel, Outlook, and basic reporting tools).

 Desired Skills and Qualifications

  • Advanced food hygiene or safety qualification.
  • Technical knowledge of draught systems, gas supply equipment, and cellar maintenance.
  • Experience working within hospitality, large venues, hotels, event centres, or similar environments.
  • Training in manual handling, fire safety, or first aid.
  • Experience implementing stock control improvements or cost-reduction initiatives.
  • Product specific qualifications such as WSET, Beer Cicerone etc.
  • Personal License Holder
